The 700 EFI WILL NOT easily lift the front wheels off the ground, without a good tug on the handlebars. However, it should have good acceleration.

I would suggest a clutch kit from Heelclicker or Dalton. Should get what you are looking for....

dave is right... the 700 shouldnt lift the front end without any help from you....it should be close to doing it though... but you should get the kick in the pants feel when u give 'er... my 500 will lift the front end about a foot off the ground in high range with me sitting back, i would say my accell from 0-30 is 2 to 2.5 seconds on pavement, if your 700 doesnt match that there is something wrong with it

If you are going to buy a clutch kit I would recommend the Heel clicker. I really helps with belt slipping when you are nailing the throttle out of the hole. I was cleaning my clutch yesterday when I decided to try the orange spring that came with the Heel cliker kit (I have been running the polaris blue/green spring) it ups your engagement a few hundered rpms. I can nail it in low range and it will come up 2 1/2 to 3 feet without pulling on the handle bars. I can put it in high range and nail it and it might come off the ground a foot without pulling on the handle bars if I'm lucky. If I pull back on the handle bars at the right time in high range it will stand stright up. I do also have motor mods that help me do this but the clutch plays a big part in it.
