Default flat tires

When I wheeled my Jeep I was always told not to air down to less than 14psi without beadlocks....I'm no mathematician, but it seems like at only 5psi (which I run at, too) we should all be breaking beads when riding hard.....

I know there's a little bead inside the wheel, but the tires should practically slide off the way I take curves sometimes. What the heck is holding them in place? It's not air pressure.
