Default using a temp laser gun to see if engine is actually overheating?

I had a Harley Davidson Sportster 1200cc. It had a dry sump system. I had a temperature gauge dipstick in the oil tank and on hot days the oil temp would read 240 degrees at slow speeds. I never had any problems with the bike when it was hot. With air cooled engines, you just don't worry about it. On hot days or slow speeds it will run hot. On cold days, it will run cooler.

Fan should kick on somewhere between 240 and 260º.

The manual says the light kicks on at 290º.
