Can anyone tell me how to remove the choke cable from the carb on an LT160 (1989 if that makes any difference)?

usually you have to pull out on the choke then take the bolt 13mm or something lose from the base then you should be able to pull it out.

Tried that but the choke was stuck like it was never coming out - hence why the question.

Had to get a butane torch and apply a little heat then it popped out with moderate force.
