Can anyone tell me why my rear brake caliper keeps leaking brake fluid from where I put the block off plate in place of the parking brake? Every time pressure builds while bleeding, the gasket springs a leak.

Age. Sounds like it is time to rebuild it. You could always take it apart and clean it up, might just be dirt/corrosion causing a bad seal.

Yeah. I had it apart and cleaned it up. I thought maybe I was missing something, like if it needed something other than a gasket to seal it. Some of the block off plates I looked at said they may take an O-ring. I don't know if I'm missing something there or not. And I'd really hate to tear my other one apart (which came with the block off plate already installed) to find out what I'm missing for fear that that one will start leaking. Thanks for replying.
