I just rebuilt my 89 lt250r i put a pro design coolhead on,re-sleved it back to stock a wiesco piston and almost everything you could think of,but i still have the stock carb on it and in all the gears, in the mid to higher rpm's it bogs and spudders like crazy i know that i have to rejet the carb but should i go bigger or smaller on the jetting,is it running to rich or to lean,any help would usefull

I went to hell and back with my stock Mikuni, I finally smartened up and bought a Keihin Air Styrker 35 for $150.00, best money I ever spent. I must have dropped $30.00 in main, pilot jets and needles, but the thing always had problems somewhere. I got the AirStryker, installed it, did a plug check, looked good, and I have not touched it since.

This place HY-Tech has the lowest prices I have seen.
you will have to call them as I do not see and carbs on their web site but their prices are as follows.
Keihin PWK 38 AirStryker $169.00
Keihin PWK 39 $169.00
I have and AirStryker on my 250 and it is great, But for your 500 you should probably go with the PWK 39
