Just brewed up a 6 gallon batch of nut brown tonight. Got that and 9 gallons of amber all fermenting. Pretty quick I'm goin' CO2-- kegging--and getting out of the bottle conditioning thing. Heck if I wasn't so far away from everything there could be an ATV bench racing & beer tasting session at the Shady Brewhouse. Guess I'll just quaff it myself, and tell you about how good it was..........

just racked my 5 gal ale in the secondaryglass carboy last night, I'll leave it there for a week then bottle her up next wed/thur, recipe calls for 2 weeks min bottle time. Brewing up honey brown tonight since there is a first stage now open [img]i/expressions/face-icon-small-wink.gif[/img] Wish I could make it high octane like my last batch(8%) [img]i/expressions/face-icon-small-sad.gif[/img]

Man 8% is like Barley Wine! I have pretty much settled into 1.044-1.048 OG and finishing at 1.015 to 1.012. I think my content (by volume) runs about high 3's to mid 4's. But you got me thinking about making a strong batch with mostly 2 row, a little amber and crystal, like an IPA that knocks you flat, like OG 1.065. My local brewmaster @ Bitterroot Brewing suggests racking into secondary then leaving in refridgerator for a week, then kegging. Really settles the yeast & proteins out, like leaving bottled in fridge for a couple weeks. Almost as clear that way as filtered. Me likes 'em clear.
