Default Port & Polish...

Porting - no brainer.
Polishing - ?

I've heard that'll make the machine very much a top end machine.

What's the general school of thought out there?

Polish the exhaust. The intake needs some texture to keep the mixture mixed and atomized as much as possible. That texture though is very slight, not anything like casting flash. Polishing the intake to a shine I have read results in some raw fuel on the walls where just a tad of texture keeps it turbulent enough to remain mixed with the air. Probably many opinions here though.

There's also different ways to port like mid range porting is what I did and that gives you power everywhere and theres full drag that takes alittle from the bottom BUT bigger gains on top!
