The choke cable is real easy just unscrew the 12mm plastic nut and pull it out.
The throttle can be a buggar, take the cover off the side of the carb housing and while holding the throttle open a bit garb the cable end and twist it so the cable lines up with the slot and pull it out.
Once out slip the cable off the retainer, then loosen the jam nut on the cable sleeve and unscrew the sleeve from the carb housing.

I would try 155/160 with your set up.

For jetting I would just flip them upside down. I take it that you noticed that the screws are soft and will round out easily, use a GOOD screw driver and I usually give the screws a whack with the screw driver on them to jar them loose.

That might be a little rich for a slip-on especially if your going to leave the lid on. What elevation are you at? You might be able to use that jetting if you at a low elevation until it warms up and you remove the lid.

I just jetted my 04 the other day and was I surprised at the screws, they came out with a screw driver easily. Also, all I did was remove the tank and flipped the carb over. Took all but 45min to complete.
