Dont start it all winter? You would miss the best time to ride.

The ease of starting it in the spring depends on what you do to prep it for storage.

On a two stroke with mixed gas and a plastic tank...I would drain the fuel from the tank and carb...plug the exhaust with an oily rag. Close off the airbox so no visitors make a nest. Oil or lube all moving parts...get the tires off the ground. Put a cover on it and let it sleep.

In the spring I would change the oil...clean the filter...fuel it up..change the plug and good to go.
