Depending on the size of the stock tires you aren't gaining a ton of height. If you went from 25s to 26s you are only gaining 1/2" of clearance and not raising the center of gravity too much. On stock rims you will be getting a similar gain in width too. If your stock tires were 11" wide and you put on the 12" Bighorns you gain 1/2" width on both sides for a total gain of 1". I wouldn't bother with the spacers. Depending on how wide your quad is and how much width a spacer would add you might be too wide for gates on the trails you ride. So, if you don't need the spacers to provide clearance for the suspension or something like that, I wouldn't go with spacers.

You will be fine without the need of spacers with only 26' on your Grizz.

there are pluses and minuses to wheel spacers. so taking an average rider for exp. even if you went with 2" spacers, whitch is the most a spacer manufacturer would recommend. you could cheeply extend the width of your quad over an expensive front suspesion set up and a knew rear axle. but you also run a higher risk of bending your rims and axle, a-arms etc. but you can also take them off or put them on for different riding areas. but evan with a half inch spacer, an expiereanced rider will notice the steering geometery doesnt respond right or even over respond. as for trail riding some riders find trails to fit their quads, and others find guad geometery to fit their trails. if your looking for stability look closer at your suspension and tire pressure. but if your an average rider at safe to moderate speeds spacers would be a cheep and satisfying cure.
