There will be circlip grooves on the bearing caps inside the yokes, (take a look at the new spiders). You knock these clips out with a screwdriver and then you can knock the caps through the yokes. Swine of a job, I did it yesterday on a Suzuki 400KQ. Getting the new ones in is usually even harder.

Probably, but I suspect you have underestimated the amount of force needed. I had to use a 4 pound lump hammer and heavy drift to get the new ones in, though the old ones weren't too bad to get out. One problem is the yokes spring apart as you drift the bearings, making them jam in the yokes.

I have had the pleasure of having to replace the u-joints...you are really ahead in getting yourself a good c-frame press to assist you.
plus you need to be careful...check the front diff to make sure its good as well. if there are any issues with the front drive line then you can possibly bugger the rear driveline as well.

Not very informative, as he doesn't show how you change the spider. Incidentally I have a 400KQ with the front diff so shot the whole front UJ yoke and 2WD/4WD shaft had come out of the diff and flailed round, knocking lumps out of the diff casting. Also a Honda 500 on which the front diff bearings had broken up too, leading to it locking and smashing the rear prop shaft UJ, which is probably what has happened to the Big Bear in the video. Great working on Quads, particularly the Honda which belongs to Cockle pickers, so every nut and bolt is seized solid by the salt water.
