Default 1999 Yamaha bear tracker. Help!

99 bear tracker gone through a tornado then sat for a year. It was given to me and so far I have cleaned tank and new gas, lines, and filter, new Amazon carburetor, new spark plug, oil filter and air filter and fresh oil, also new coil and battery. Starts and idles but will bog down and die with any throttle but will run decent if I mess with the choke but it wont run for long. Any ideas what I should do would be greatly appreciated!!

Choke controls air/fuel mix, if choke is on then you have a rich gas mix if choke is off then a lean mixture. So if your messing with the choke what are you doing?
Check plug...if wet then to rich, if dry and white/lite gray then to lean.
Make sure you have a nice blue spark on the plug, yellow is a weak spark
