I tried loosening the two bolts on the side of the swingarm in order to tighten the chain using the other two adjuster-bolts. Are these side bolts supposed to be "super tight" and very, very, very hard to undo??

Yep, the hub nuts should be tightened to 65 ft lbs using a torque wrench.

Yep, I use a "closed end" wrench for less risk of slippage.
After adjusting the chain, double check the alignment by measuring the adjuster threads.....if it's off just a ever-so-slight amount, you'll be pulling sideways all day. Never had a quad that is so picky about alignment.

When adjusting the chain slack, it should have about 1.5" to 2" slack unloaded. Best way is to have some one set on the seat and check for minimum slack. Don't overtighten like bajo string. When the slack is correct, tighten the side nuts. This will keep the axle perpendicular to the frame (parallel to drive axle). Now, snug both adjuster bolt up against the inner hub, lock them down.
