Setting up 250R?

Looking for advice from some of the 250R pilots out there...
I've got a '88 250R, ported & polished, spacer plate, '86 style piston, stock carb, K&N, FMF pipe and silencer. It's running ~210 psi, burning AV gas and Golden Spectro at 50:1. I've inherited the goofy jetting setup from the prior owner, and I can get it to run best with the air box off, a 180 main, and the clip in the top groove on the needle. The slow jet is currently a 65 vs the stock 45, and I think it's way too rich. The machine starts without using the choke, and bogs and hesitates after low speed trail riding.
Any thoughts on what the slow jet size should be with the above motor mods? How dangerous is it to be lean on the low end?
