Well, I'll be honest with you. If I was your size I would not get either. But that's just me. They are both big quads for bigger people. That being said, maddog56 pretty much hit it on the head.
I really like my V but it's big and heavy. Some people can air them out but this is not my choise of quads for doing this. The V is big and nasty but it has Walmart suspension from the factory. It is super fun to climb with and trail ride on. The belt and shaft just makes it a super trail quad.
They are both great quads. I think if you flip a coin you won't loose on either one.

Raptor 700 or KFX 700
The KFX is a large frame machine, and along with the DS650 should be reserved only for those who are so large that they absolutely can't fit on anything smaller. I have friends who jump their's at the dunes, but it's a risky mission IMO.
So, of these two, the Raptor is the better choice unless even it isn't large enough for you. I find that the Raptor has a fairly high center of gravity and it is a little narrow for my taste (but nowhere near as tippy as the old Raptor 660), so I would be widening it some if I had one.

I've never ridden the 700r but I've ridden the KFX700 many times, and it is VERY strange compared to my z400.....
The kfx700 handles like a truck IMO. The steering is quick, and the power is great, so it does not feel heavy like a utility machine, but compared to a 400ex or z400 it feels like a tank. Plus I like to shift so the CVTs are not for me..... But the engine makes gobs of torque, and it is fun enough to ride.
My father loves his, but he's been riding Polaris all his life prior to the kfx700 so to him it feels light and fast.
Of the two I would pick the 700r......
But if I were you I'd consider a 400cc class machine like the z400 or 400ex....... both would be a perfect fit for your size with plenty of power to keep you happy....

Schubie, I have a bit of seat time on both. As soon as you put jumps into the equation, throw the KFX out. I know I'll hurt some feelings with that one, but for jumping the Raptor is far superior. The big Kawie really shows its ute roots once the wheels leave mother earth. Also, if this is your first quad, then a 400 class machine is plenty for trail riding and a bit of jumping. Since you mention more open riding, the Z400 is probably the best of that class.
