Ah, thought u said the 350x carb was 1 mm smaller than the 300ex one. Being 2 mm bigger will give it a boost on top end and make it make more power when you start modding it. No accelerator pump though means its wont react as fast when you mash the gas. Prolyl some other stuff too lol, but ive never had a machine without one.

Yes, jetting changes are required. It's not usually a big deal though.
Anytime you make changes that will alter the engine's air flow properties (i.e. practically anything you do), you'll need to make jetting changes to make the most of your modifications.
Another trick is to remove the choke plate on these carbs. Although it won't make a huge improvement, it does make a noticible throttle response difference. If memory serves me correctly, it's good for about a 1hp gain on a 400EX.
