I'm going to assume you have a stock 400EX.
Two basic kinds of paddles, straight paddle and chevron.
Straight paddles are great hook-up, going straight, hill climbs.
Chevron paddles have a little less hook-up, but turn easier.
If you have a stock engine, get paddles with no more than 8 paddles or you wil just overload your engine.
I have a 250R with some mods, run SandSkat I's with the chevron paddles on 10inch wheels. I can climb anything at Glamis or Dumont.
Skat Trak makes an excellent paddle. They buff off the tread of a tire and then vulcanize on the paddles. They work great but are not very resistant to punctures and if a paddle starts to delaminate it will tear a hole in the carcass of the tire.
The shape of the paddle has nothing to do with what quad you put them on, how much you weigh, etc. It all has to do with your riding style. Since I really do ride all over the dunes and don't just hang at the hills and race, I prefer the chevrons. If all you want to do is race straight up a dune, then get the straight paddles. If you get too aggressive of paddles for your motor, you will just tend to lug it down. You need to be able to spin them all the time.
