Stators put voltage in AC
The voltage regulator's series of diodes convert it to DC
The AC, DC issue is within the ignition system
Identifying weather or not the ignition is normally open or normally closed can determine if it is AC or DC triggered.
If I were you, I would pick up a cheap gas powered 300 or 400 watt generator with a 12 volt outlet and run the sprayer off of that on the quad.
The problem with the Recon is it's inferior single phase stator. I guess I can not offer any help on what it would involve converting to a triple phase system, as I have not messed with any of that stuff on a Recon

The charging system in many motorcycles generally has magnets on a flywheel rotating past a fixed stator, and no brushes or slip rings or commutator. This is an AC generator system, so the output is converted to DC via a regulator/rectifier.
The alternator used in cars will usually have armature windings rotating past field coils, and slip rings and brushes. A DC generator will have windings on the armature rotating in a magnetic field provided by either field coils or permanent magnets, and a commutator and brushes.
