Default 39mm PWK Carb problems

I have a 90' pilot that I just received the top end back from ATV Racing in Arizona. I had all the cool stuff done. Cool head, ported, new piston, new exhaust, v-force 3 reeds, powerbloc clutch with new belt, CDI mod and of coarse a 39mm PWK carb. most of the bells and whistles. My problem is this. It starts within the first revolution of the crank and idles all day. once it warms up I will take it out and slowly go through the throttle. Between 1/8 and 1/2-3/4 throttle it sputters quite a bit. Once fully open, man it rips...no hesitation, just smooth sounding speed. Also, when I punch the throttle it definately hesitates a little. What I would like to know is where my jetting should be. I currently have a 40 pilot jet, a 170 main, and an "EEG" needle set at the #2 position. When I remove the plug it looks a little wet and the exhaust smokes quite a bit more than I am used to. I am running 170 lbs compression at 32:1 oil/fuel. could someone pleae tell me where I should be at as far as jetting or at least an idea. My nex step is to have it Dyno'd and I can't really explain another cost to my wife after this last one. Oh yeah, I live in Oregon at about 500' and the average emp now is around mid to low 50's. Thanks alot for anyones time.
