I am 6'1" at about 360lbs and I ride the BF650 and it has more than enough power and the ride is great I can keep up with most of my friends on sports (can't beat them yet) but I don't get left behind. I first rode the Brute Force I tried the 750 first and didn't care enough for IRS cause there is $1000 difference in the 750 and 650. and when I rode the 650 and allmost stood it up and hit 50mph in the parking lot I knew that was enough quad for me. Now I have 25" ITP Mudlite XL on the 650 and there is not much that has been able to stop me I go places in 2 wheel drive that my Grizzly wont go thru in 4 wheel drive. Now I am going to be putting on a Moose Module that should really give it that low end I need to get off the line with the sports. Hope this helps you Just one mans opinion on the BF650. The Polaris is already too heavy. I bought an '02 P650 from a guy who weighed over 400 lb, he had no problems with it, and I had no problems with it for 1800 miles after that. It's still one of the fastest bikes in our 50 quad group.
At your weight, you might want to consider the center of gravity of the 2 bikes you're thinking of. The cg on the Prairies or BF's is lower than the Polaris, a little less chance of falling over on a side hill.
My 2 cents, I would ride the 750 BF, the Polaris 700 and 800, the Bombardier 800, and the Prairie 700. My 400 lb friend has a P700 and also a kfx 700, loves them both. My P700 is faster than the either of the above 800 cc bikes I have gone against, I'm at 200 lbs + 100 pounds of stuff in my front and rear trunks.
You're buying at a good time of year for price.....good luck.
