I have a sportsman 500 04.5 model. I'm looking at either Gators or the new mud lite tires. Whats the biggest size I can go with out rubbing. What about spacers, will they be needed. I woule to add ITP wheels to

i suggest only going up 1" over stock.

I also think 1" over stock will probably be fine using the ITP wheel. Using the 27" mudlite you will have to lift your front springs with a spacer or put in a progressive suspension kit. You won't need any wheel spacers with the ITP wheels. With the 26 you might be borderline for adding a clutch kit to save your belt. 27" definately get a big foot clutch kit.
