My wife is about the same size as yours, she rides a Magnum 500 with no problems. She picked it out herself, and had no experience with ATVs beforehand. She is careful around obsticles she thinks might be too much for her, and only goes as fast as she feels safe going.
The important thing here is confidence and common sense. If your wife is nervous about all the power a large quad has, she probably won't do all that well. If she's not afraid of the machine and want's to learn how to ride it, she can ride anything in relative safety.
Make sure you get her a good helmet.

If you get her one, be sure to bring along your jaws of life to pry it off her if she ever tips it over
I have an Xplorer 400, and a Honda Fourtrax 300. If we go anywhere on seperate machines, I need a crowbar to pry her fingers off the Xplorer so I can drive it. She likes the idea of always being in the right gear, and not having to figure out what brake lever does what. She is not much of a 'sport' driver, but still runs circles around me on the Honda! I have taught 3 or 4 females to drive an ATV (had the first Polaris in the neighborhood & they are the easiest to learn) and they all shared one trait. They were easy on the gas until they felt they could control the machine. I wouldn't worry about it, unless your wife was nicknamed 'kamikaze' in driver's ed. Teen-aged boys are a different story.
