400 xplorer jetting or air

here is whats up...
i have a 97 400 xplorer 2 stoke and it blew up (big suprpise) anyway i found a fresh rebuilt engine out of a 94-97 scrambler, i notice the reed cage is a bit different (it has a tee handle on it) dont know what that for???
now my can is stock but a plugged the down spout and welded a stump on the end of the can
the temp. here is about 26-32 deg
i always ran a 220 main jet in the winter and 200-210 in the summer,
i notice it flat spotting or (leaning out) at wot this was with the 220 in it and it smoked
now i put a 230 then a 240 jet and it seems to smoke less...
i ran about 1/4 mile and it started to lean out again...the plug is real light brown...
any sugestions... is it air or gas related,
i have k\n filter, & down spout cut in the air box....
if i put a temp guage in the pipe what temp should it run??
