Default throttle/clutch ready se go??

Why is it that the Polaris seems to need to ramp up a bit before the clutch catches and the machine will start to move?
Other brands seem to start to move as soon as you give it throttle.
Is that a function of the engine breaking system?

They've got to have a little slack or you'd have a hard time shifting one if constant pressure is on the belt from the clutch system. If yours seems sluggish on engagement, you might try removing the cover and in an open area blow out all the belt dust from the clutches. See if it helps along with checking the condition of the belt and fiber washer in the front clutch one way and the front clutch guide buttons for wear. The rear clutch has to be taken apart if you suspect it as a problem.

I don't suspect that it is a problem as much as just different. I have had Suzuki's, I Just picked up a 04 sp600 my first Polaris.
I will clean things out and see if that makes things a little smoother.

it idles at 12ish and engages at around 1900-2000ish from what I have read that seems about right.......? It just seems a bit rough/jerky to me.

Just pull the clutch cover and check the belt. A simple glazed or burnt section on the belt can cause jerky clutch engagement.Plus while there,I'd still go ahead and blow out the belt dust from the clutches.
