The recommended amounts are probably suggested for the safety of the buyer. Although certain machines might be able to pull more weight.
The recommended amounts for the racks are probably suggested also for the safety of the buyer. If you put too much weight on the racks it can effect the handling of the atv greatly.

The towing limits are based on being able to safely stop the load you are towing. A bigger machine with hyraulic disc brakes is going to be able to stop better than a small machine with drum brakes.
I am sure your ozrark could pull a couple thousand pounds pretty easy. But it will push you when you want to stop.

I used to put my 18' boat in and out of the water with my 88 lt230E. The quad was rated for like 600 pounds and the boat weighted 3400 pounds. The only problem I had was traction because it was on a stone launch and keeping it from pulling me down the hill was the hardest part. It had the grunt though. It had no problem pulling it out in first gear.
