What is getting stripped? Usually you just get the right sizee socket on em and they come right out. Are you sure you've got hold of a jet? Maybe it is something else you are trying to remove?

Some vise-grips, a 6-pack and a decent amount of cussing ought to do the trick. No, seriously those should spin right off. Don't break anything, if you can't get them out find someone who can.

Socket? I've never seen anyone use a socket on a round mikuni small main jet. What you need is a sizeable flathead screwdriver and some more lead in your pants. Try a T-handle to ease your problems. Make sure you use a flathead big enough that it wont rotate in the slot and strip it out. And remember, righty-tighty lefty-loosey.

I've always just used a flathead screwdriver, had no problems with all the changes I've made.

Congrats . I recommend adding some allen head screws for the bowls upon assembly. The stockers strip out easily.
