Wheel offset

I recently installed 25" mudlites on ITP wheels. Although I have the offset prescribed for my model the offset is alot more than I was expecting. From reading I have found that this is normal.
I ride pretty aggressively, so I am looking for some kind of skidplate to protect the now exposed rear brake disc. If there is a different or special wheel I should look into please advise.
Any help would be appreciated.

I know it looks like a lot of ***** gonna hit the disk but really... I ride hard and never, at least I don't think, have hit anything off my disks. I've got the same "recomended" offset ITP's. They sure look cool though eh?!
