Default Front and rear sprockets?

I am wondering if anyone can explain how changing the number of teeth on the front and rear sprockets effect the drive and power of the bike. I am a new rider and not yet much into turning wrenches, I also do mostly trail riding and would just like to get more power.

subtracting from the front or adding to the rear gears it down giving more acceleration. adding to front or subtracting from rear gears it up giving more top speed. if your trail riding u will want to go up 2 on back and down 1 or 2 on front

We have three set ups that we use at different tracks, although we don't change the rear at all. Please correct me if I'm wrong but I believe one tooth change is equivilant to 3 or 4 on the rear. We don't like to go bigger in the rear because of the clearence between tire ruts which wouldn't matter as much for trail riding.
