Before you do anything, flush out the brake system several times with new brake fluid. i know that you said that you've bled them a few times, but sometimes, it takes more "flushings" than you might think.
If both of your calipers are locking up, check to see if your mastercylinder piston isn't hanging up due to corrosion. May be time to rebuild it.
If only one caliper is locking up, there are three things to check.
First, be sure to put anti-seize on the brake pins EVERY time you change your brake pads. you would be amazed at how much better your brakes work without the resistance of a pin with crud and rust on it.
Secondly, you can check for piston interferance on that one particualr caliper like you would if it was the master cylinder. Replace the seals [under 10 bucks] and clean the piston bore with emery cloth or 400 grit sandpaper.
Third, check to see if the side that is hanging up doesn't have a warped brake disc. this can cause the brakes to bind up when you apply them.
