Living in the arid southwest, I can't say much with authority about mud, but we do get a lot of snow in our mountains.
The Rancher does very well in the snow. It is "relatively" light weight, and I run ITP Holeshot ATR Radial tires which are great snow treads. I also run a Maier plastic skid plate, which acts as a huge ski and floats the quad on top of the snow so the frame doesn't dig in and high center. The torque sensing front wheel drive, does well too.

the rancher is pretty decent in the mud. just put it in 2nd gear and hold it pinned and you'll get through a lot of stuff. It's a lot lighter than the other bigger 4x4 quads, so if you do get it stuck it's easier to pull out.
