Are 27" MudLite XTR's Right for Rincon??

No reason to go bigger. Just stay with stock size or go up 1 size and get a more agressive tire. My rincon does better with an agressive stock tire than my friends Sp700 with 27" tires. Its better to have the power available with the right size tire than have a bigger size tire and not have the power needed to spin them. Going up to a 27" tire only gains about 1" of clearance. This will not do much in the real world of mudding but take all your power.

Ok what kinda trails do you ride on? Do you want 27 for the extra ground clearance or?
May want to think about getting the high lifter gear reduction kit, helps with bigger tires. Need to take into a dealer to have done kit replaces stock gears inside motor with lower gearing.
How about looking into the mxr radial tires.
