Well the light coming on and it stopping is not common. The fan should come on if it gets warm. If it's cool out (say like 40 degree area)it most likely will only start running if you're riding slow in low gears. In the summer it comes on a little more often still depending on the temp and riding speed. Even on a cool day, if you let it just sit and idle for a long period, it should kick in.

Rangercd is correct. Also check the oil cooler radiator for clogging with mud. Squat down in front of the quad and look towards the gas tank and you will see the radiator. If clogged, squit the garden hose on it to clean it out. DO NOT use a lot of pressure or a pressure washer or you will damage the cooling fins.
