If you can get the power output up high enough the clutch will run out around 75mph. My STP700 will run out at around 75mph on the dyno, however only my modded 800 can run the clutch out all the way in the real world. If you have the power you can get a little more with taller tires, and there are some clutch mods combined with some parts from the V-force, 80+ mph is possable, but I will say I have had my 800 up to 78mph with the use of taller tires than stock and it gets a little floaty up there, I don't know if it is worth the money to me to get the other 4 or 5 mph.

As far as cc, his info is all pretty much dead on. You can clutch for whatever speed you want, alltoys had 98mph. But we all know why thats a bad idea.

Our "stock" Prairie 300 will run around the l,ow to mid 40's mph... about the same as the 360's... HOUSE... I'm curious what you don't believe, as well... there is a very large variance in top end speeds between seemingly similar stock quads... it is very possible for the faster ones to reach close to the upper 60's in top speed... mine was a slower one in stock form...( part of the reason for my rebuild )... now I run similar speeds as stated, with my modified 750cc Prairie...
