Looking for the standard clutch roller size and weight
Noticed when doing the crank seals the rollers were flat,plastic worn right through
Would this cause the quad to lose top end speed?

Flat rollers cause alot of bad things. lack of speed, take off, and gouging of the variator and roller plate.
There are no aftermarket rollers for the LT80. You must use stock rollers.
Look at the variator and roller plate for gouges. Replace if gouged. If the rollers are that bad, I suspect damage.
