If you're not in a position to go to attend school to work on ATVs, the best way to learn is just to get out there and start working. Troubleshoot as many problems as you can. Most small engine repairs are not difficult, but it does take time and experience to learn the ins and outs.
Since you're looking for something structured, I really recommend you get a Clymer Manual. They're very detailed and include even basic information about tools and shop practices for someone who is just starting out. Most of the manuals are around $35, but if you're serious about doing your own maintenance, that will pay for itself in no time.
