I am hearing the best way to change the Sportsman 800 twin engine spark plug
(on left side) is to remove the gas tank? Is this true and what is the level of PAIN
difficulty?

all i did was undo the belt snorkel and moved it a little bit out of the way it still was tight but it gave me just enough room to do it.just take your time and dont get frustrated.for more room undo plastic around tank and remove snorkel
