Check the intake manifold for any cracks. They crack all the time, and can give a problem similar to yours if they crack in the right spot. At idle they're ok because there's enough vacuum to pull the gap together and seal the leak enough, but when the throttle gets cracked open the vacuum drops and the gap allows air to leak in and throw the a/f ratio way off.

What does it do if you rev it up in neutral? Does it act like a rev limiter, or like it's running out of gas?

Check the intake manifold for cracks/tears. When it's idling push the carb side to side, up and down, and see if it changes the idle, or makes it cut out or misfire.

That doesn't have anything to do with your intake. If you're going to shoot down my suggestions without trying them I can find better ways to spend my time.
