Default Temp Light Working?

I recently purchased a 2006 Kodiak 450 and rebuilt the top end-bored cylinder new piston and rings and rebuilt head. The temp light has never come on and the service manual says it should come on momentarly when you turn key on. My fan is coming on while just riding in cold weather while I break the new cylinder in. I'm concerned that the engine might be running too hot. Is there a way to test the temp light? Should the fan be coming on in cold weather-30 to 40 degree?
