Well, you tighten your springs down to whatever torque the manual specifies. You tighten them all the way down.
As far as the order of plates, you start with a friction plate first against the clutch basket. Then a steel, then a fiber,then a steel,etc,etc........If it's done correctly, you should end up with a friction plate against the pressure plate.
Also, don't forget the "BB" ball on the clutch push rod when re-assembling your parts. Way too often, people lose this and forget it. Without it, your clutch will not completely dis-engage when you pull the lever and all the cable adjustment in the world isn't going to help.
