I spoke to a Can Am tech while waiting for amquote from the Sales Dept. and he says it will limit the take off a good deal. The hit comes when you mash the throttle and it has to be more than half almost pinned to start picking up the front end. If you have the throttle stop all the way in, you will only open the throttle half way and the engine will not make that low end torque. That what was explained to me. He still threw caution to the wind and said it WILL BE too much bike for her in the beginning.
Alot of help he was, just kidding!
I will let you guys know the prices they quote me.

rpm's up to around 3500 and my top speed was around 13 mph riding in the back yard. Not as quick off the line either- but, there was also very little power to crawl over my dirt berms... I turned the stop out to 1/4" - was a whole lot quicker and a little more power obviously, rpm up to 4800 +/-.
The problem is- if you turn the 800 down to the point she'll be comfy with it, then you'll have to stay on flat ground or in low gear to get up even a moderate hill... but, I guess it would get her used to the feel of the atv.
so- I suppose you could use the throttle stop and adjust it for her level- just bring a screwdriver with you for the hills
