Eton rascal 50 no start

Bought the little one a 2 stroke rascal that the owner said had carb issues. I checked it out and it wouldn’t start, sprayed a sniff of fluid and it fired right up and stayed running on choke so I purchased.
I get it home and realize all the fuel lines are rotted so I replace and change the filter... starts right up first pull no choke and idles perfect. Even pulled my 200lb butt around.
Birthday comes and he/cousins ride it for a couple hours and then one gets a bit wild and takes it through some puddles and stuff.... still no issue. I tell him to park it and I come out 1hr later and will not start. Give it a sniff of fluid... nothing. I pull the plug and it’s black and nasty so I replace and try again. Nothing. I pull the plug and check for spark and it’s got spark. Fuel is pumping and air is clean. I’m lost.!!!

That’s how I got it to start before we replaced the fuel lines and filter. I would spray a sniff of carb cleaner and choke it and it would fire right up. After I replaced all the lines , new gas, new filter it would start on first pull with no choke for 2 days. They rode it for a couple hours and now it will not start and little dude is heart broken. I’ve got spark and changed the plug to be safe and still nothing

An engine needs exactly the right air/fuel ratio to start, note that you can wind a Suzuki Eiger all day in Winter and it won't start without the choke being on, yet it runs fine without choke once warm. So you squirt in carb cleaner and, if you get the amount just right, it will fire, too much or too little and it won't. I repeat, clean the carb out.
